Recipe for traditional Shrove Tuesday pancakes

Ingredients

For the pancake batter
110g/4oz plain flour
a pinch of salt
2 eggs
200ml/7fl oz milk mixed with 75ml/3fl oz water
50g/2oz cooking oil

To serve
sugar
lemon juice

Method
Sift the flour and salt through a sieve into a large mixing bowl.
Make a well in the centre of the flour and break the eggs into it.
Whisk the eggs into the flour.
Gradually add small quantities of the milk and water mixture, still whisking, until the mixture becomes a batter the consistency of thin cream, without lumps.
Melt the oil in a frying pan.
Get the pan really hot, then pour in enough batter to cover the bottom of the pan.
Fry for a few minutes, until the bottom of the pancake is a light golden brown colour.
Toss the pancake into the air, with a flick of the wrist so that it turns in mid-air and falls back into the frying pan golden brown side uppermost.
Fry until the second side is a light golden brown colour.
Turn out of the pan onto a plate.
Add lemon juice and sugar to taste.
Fold the pancake in half (optional).
Eat and enjoy.
When I worked in Lebanon, I discovered that my students had never heard of Shrove Tuesday being Pancake day.
So I invited my class of 12, together with 3 or 4 colleagues, to a pancake party where, before they could eat their own pancakes, they had to cook and toss them.
Great fun, especially as my reward was the gift of a large cake with "Lynda, the Best Teacher" in icing across the top!
